It’s Memorial Day weekend, and first off – a very special acknowledgement to all who have made the ultimate sacrifice for the rest of us. This year, it feels even more poignant to me, since there are so many folks who have jumped in to serve when we needed them, especially our first responders. And yes, absolutely- our regular Joes and Janes who didn’t sign up for any of this but kept it going. I’m talking about the grocery store clerks and food delivery people, the bus and cab drivers, the restaurant workers and drivers, the truck drivers. So many people who deserved so much more. I give them the same level of honor as my uncle Jimmy whose name can be found on The Wall – another person who didn’t sign up for any of it, who had an opportunity to move to Toronto with family, but stayed and became yet another casualty of the Tet Offensive.
Like most folks, uncle Jimmy enjoyed a good barbecue, and most folks associate Memorial Day weekend as the summer kickoff – complete with some backyard grilling. This year, many of us are sticking to our own back yards but still want to get their grill on. And what’s the most popular side dish? Potato salad! I’m certain uncle Jimmy would approve, and I’m sure if you use my recipe, you’ll be asked to make it again. And again. And again!
